As promised… “evil Banana Nut Bread”

So yesterday on the FaceBook page I promised to share this recipe and then I ended up with a migraine and couldn’t look at the computer…but alas I am back and eating another piece of this evil bread as I type.  I made two loaves and this is the last piece we have in less than 24 hours.  This stuff if ridiculously good.  Everyone begs for it!

God bless neighbor Susan for sharing the recipe with me years ago…she is a great cook!

Neighbor Susan’s Fantastic Banana Nut bread

Batter Ingredients:

3/4 cup Butter
1 (8oz) package Cream Cheese
2 cups sugar
2 large eggs
3 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp salt
1 1/2 cups mashed bananas (about 4 over ripe)
1 cup chopped nuts
1/2 tsp vanilla

Sugar topping Ingredients:

1/2 cup firmly packed brown sugar
1/2 cup chopped walnuts or pecans
1 tbs. flour
1 tbs. melted butter
1/8 tsp. cinnamon

1~ Beat the butter and cream cheese until creamy.

2~Gradually add sugar, beat till fluffy.

3~Add eggs.

4~Combine flour and remaining ingredients.

Tip~ when getting ready to “mush” up your banana mush it up in the skin first.  Oh and be sure to use
very brown and old bananas…cause they will give you way more flavor;-)

Oil your loaf pans.  This recipe makes enough for two loaves or sometimes I mix it up and make one
loaf and a pan of mini muffins for the kids.

Moving on to the “evil topping”..cause every good bread has an “evil topping”.
Start by adding all of the topping ingredients into a regular bowl.

the fun part…add those crumbles to your loaves;-)

And if you would like to overdose on sugar…add HEAPS to your pan…

Bake on 350 degrees till your fork come out out with crumbs or clean…not with goo
Be sure to hit the middle since it will take the longest to bake.

If you find the the edges are getting finished well before the middle…try turning down the oven
to about 300 degrees and give it a little longer.

Grab a big glass of milk and enjoy!
